Baba Ganoush - Aubergine dip


What you need



1-2 aubergines (click the link to see health benefits)
1-2 lemons
3-4 garlic cloves
Tahini (sesam seed paste)
Olive oil
Pepper, salt and parsely


How to do it

Slice the garlic -put aside

Prick the aubergines with a fork, rub them with olive oil and put in a 200C oven for about 30 minutes


Blend UNPEELED aubergines with the garlic, tahini, lemon juice, pepper and salt



Serve with naan bread



(or vegetable sticks, pita bread, or anything dippable)
  

This is the simplest Baba Ganoush recipe, so feel free to add onions, tomatoes, herbs, cumin, chili powder, pomegranate extract or whatever your heart desires
