Carrot-ginger soup


An excellent soup for detoxing – two versions can be made in one go and both taste good whether served warm or cold


What you need


























8-10 carrots
2-3 onions
2-3 tomatoes
1-2 apples
1-2 yellow bell peppers
2-3 garlic cloves
Fresh ginger
Lemon juice
Turmeric (dried powder or fresh -or both)
Fresh basil
Coriander (cilantro), fresh or dried
Sunflower seed oil

Optional ingredients for version 2:
Coconut milk
Dried pumpkin seeds


How to do it

Crush the garlic -place aside
Boil the carrots and once somewhat softened add sliced apple and bell pepper





Fry cut onions, the crushed garlic, turmeric and black pepper in the sunflower seed oil



Add tomatoes to the boil, together with the contents of your frying pan and add lemon juice, basil, and coriander



Blend



Version 1 is ready, here served with pumpkin seeds and basil




For version 2; add coconut milk and stir. The coconut milk rounds the tastes and allows for more spice (= Stronger detoxing effect)


Serve with black pepper and cut basil
